In my perception of the evolutionary process of the human being and his way of eating, his preferences and the confirmation of his fidelity to himself, the fruit of the olive tree appears as a symbol of health. The idea was born from my own need to express and share everything that my memory and life experience had been developing in an empirical but consecrated way, with the only truth of offering "the food" that people were waiting for.
